Apples Feed the Soul

There is nothing that is more comforting than apple pie. And even the task of peeling the apples is cathartic to me... I found this recipe in the new issue of Gourmet that called for half a pound of white cheddar for the pie crust.

It ended up being the perfect compliment to the sweetness of the apples.

And I might have done something wrong but I had enough pie crust left to make a provolone, ham & broccoli quiche.

It's total sacriledge to waste extra pie crust. Take it from me....
