Can someone say SNOW DAY?!
In Chattanooga there aren't many times when you can say those two words unless you are a teacher. However, at the last minute I got an email and before I knew it I was planning a special breakfast for my husband and I.
I've had a recent love affair with curry after making this delicious Eric Ripert recipe. So I added a teaspoon of curry and some chickpeas and top with feta. Add some thick-cut bacon and a couple slices of fresh bread and you will be ready to go out and make your first big snowman.
6 eggs
2 tbsp olive onion
1/2 chopped onion
2 cloves of chopped garlic
1 12 ounce can of chickpeas
2 tbsp feta cheese
1 tsp curry powder
Salt and pepper to taste
In a skillet heat the olive oil on medium high. Add the chopped onion and garlic. Saute until onions are translucent. Add the chickpeas and cook until heated through. In a mixing bowl, whisk 6 eggs with 1 tbsp of water. Add the curry powder. Add into the skillet and scramble the mixture. Top with crumbled feta cheese.


I, too, love using curry powder to warm up a lot of winter dishes. This is a great and unexpected way to use it, though! Thanks for sharing.
ReplyDeleteYou have all of my favourite things in this dish. I love using chickpeas in hearty dishes like this because the flavour is very "winter" but you can still move after you eat it.
ReplyDeleteI'm also a big curry fan. have you ever tried curry pastes? I think they add a fresher and more complex taste.

ReplyDeleteI never would have thought to put eggs and curry together until recently, when I purchased a curried chicken omelet with smoked gouda. It was amazing, and this sounds equally delicious!
ReplyDeleteThis is a great simple recipe. I don't have curry powder on hand but I think I really should for simple recipes like this. I especially love that it's paired up with chick peas for even more protein!
